I altered my standard approach to fajitas, which generally consists of following the back of the spice pack. I used more of everything than the back of spice packet recommended, (1 1/3 lbs chicken, 2 peppers, softball-size onion), so I used two of them. I also added some pineapple, which was quite yummy. I suspect that, with a little more pineapple, the bird meat wouldn't be necessary, if one were so inclined. Also, instead of adding water, I added a 2/3-1/3 limeade-water mixture. The net effect was rather caribbean, somewhat sweet, and not spicy at all. I think it needed some tang, and
think_too_much suggested cayenne pepper for next time, and I'm inclined to give that a shot, though other opinions are, as always, welcome.
