Lo Mein Files, Part 1

Reader input greatly appreciated. I don't know when the next attempt will be. If you want to be around for it, let me know and I'll see what I can do. I'm probably going to do a similar documentation of attempts at pizza sauce, starting with Cook's Country via Cooking for Engineers and Alton Brown's recipe in Pantry Raid II. But that will require additional hardware, as AB uses a roasting pan both stovetop and in the broiler. I wonder if I could use the bottom of my broiler pan instead...
