There's no point to any of those, and you know it. We now know what total deprivation of a single resource is like. Since grain is the most useful, all of those that you've listed are more forgiving than what we've already done.
There's a "no rock" variant in the original Seefahrers book, where the main island is basically what you'd expect, but a bit elongated, and then there are four satellite islands all to one side of it, each made of one or two rock hexes. Those hexes get numbers upon someone connecting to them.
Again, no! Removing corn from PR removes one of several strategies and weakens a few others. It is not an integral part of the game the way grain is in Settlers.
