Anyone interested in doing foodly-like things for Passover?

I'm busy Monday through Wednesday nights, and Saturday morning/afternoon, but am otherwise free. I'm thinking about Matzah Brei Sunday morning (Easter, btw) and considering trying to put together some sort of end of Passover potluck for Tuesday evening.

Let me know what you're interested in, and we'll make stuff happen.

Mmm, that sounds enticing... (OK, I don't actually know what chiliquillas are, but anything involving lots of cheese and salsa verde must be really tasty.)

I'm not sure if you'd find any salsa verde that's strictly kosher for passover, but I would think you could find some that's ingredient-OK for Passover. I know Trader Joe's sells salsa verde, and I wouldn't be surprised if it were OK for Passover...

Oh, and by the way--yeah, cheese is OK. People who decide to keep strictly Kosher for Passover may only want to eat Kosher cheese, but I doubt anyone in the intended audience is keeping that strictly Kosher for Passover... (And cheese shouldn't have anything to do with the Passover Kosher laws--but some people keep regular Kosher laws strictly during Passover even if they usually don't. I think that's kind of silly, but apparently I'm in the minority, given the funny looks I get when I eat a ham and cheese on matzah sandwich... ;) )

In theory, I'd be interested in something... In practice... Well, I doubt I'd actually manage to get out of the house early on Sunday to have matzah brei, even though it seems like a nice idea. I'd be more likely to come for dinner, but I can't promise that I'd actually end up coming, since I do have a decent supply of OK-for-Passover Trader Joe's food. (By the way, if you're looking for Passover food, you may be surprised at some of the things there that could be OK for Passover...) But yeah, especially if that OK-for-Passover food doesn't actually cover all of Passover, I could still be interested in dinner towards the end of Passover... And if some sort of seder thing actually happens, I think I'd be interested...

I'd be interested. I heard about a sefardic flan (no milk, it uses orange juice) that I might be interested in trying.
