Being vegetarian and gluten-free is a difficult combination
Boy howdy yes. Knowing what I know about gluten-free eating, I'd say it would leave an unpleasantly restrictive diet to be vegetarian on top of that; knowing what I know about your love of cooking, I'd guess you would become extremely frustrated with it quickly :-( (I don't think I know anyone who even tries to combine those two restrictions, come to think of it.)
Sure, no need to eat anything other than poultry and fish as far as the meat goes. (I've gotten to where I really don't mind turkey-bacon and chicken-sausage, though I can definitely tell the difference.) Iron can easily be had from non-beef sources.
I highly, highly recommend Sarah McNary as someone to talk to about gluten-free cooking (especially baking).
Gluten free + vegetarian: probably one's best bet would be Mexican food and Chinese food (if you pick carefully, in both cases). Foods that are heavier on rice. It would be annoying, but it wouldn't be that bad (half my meals are beans and rice, anyway).
The worst case I've encountered is I have some friends who are vegetarian, whose baby daughter has mild allergies to soy, and severe contact allergies to cow's milk (bad enough that she can't a lot of commercial breads, and you have to wash your hands before touching her, or even her toys). They had to stop being vegetarian, and every time they eat out, they have to choose which of them will have to hold/feed the baby, and which will get to have cheese with their meal.
