From yesterday: Grate two medium russet potatoes. Rinse and squeeze moisture out. And I mean squeeze. Grate half a very large onion. Combine potatoes, onion, and one beaten egg. Add salt and pepper to taste. I also added a couple shakes of bread crumbs to help hold things together - maybe if I dewater the onions along with the potatoes it will work better. Anyway, fry and enjoy.

Given the interest, how would folks feel about a 10th-night latke fest (week from today)? I think it has to be that late based on my schedule and what I know of your schedules (the only other night I could really do it is Friday, and I think several of you). will be out of town then).

Oh, and [livejournal.com profile] wayman, I've never heard of reusing the oil. Anyone ever hear of that tradition before? [livejournal.com profile] trinfinity, while I adore nutmeg, I've never heard of using it in latkes. I'd be willing to try it though - is it on your allergen list?

Interesting... my train gets into 30th Street at 19:42 a week from today. Not sure how the SEPTA schedules would work out, though.

Well, I have a container of potato starch lying around, and I hope to make another test batch this week without breadcrumbs. I may invest in some cheesecloth.

In terms of trains, I would imagine things will start no earlier than 6, probably closer to 7, so getting here shouldn't be a problem for you. The 11.40 out of Jenkintown is the midnight train to Swarthmore, so getting home should be feasible.

There are three trains towards this general vicinity leaving 30th between 19.45 and 20.00. Naturally, the one that gets you closest is the earliest of the three, but regardless, it should be possible to pick you up and get you here.

I thought the true miracle of Chanukah was that not only could they keep the lamp lit on the same oil for eight days, but that they could even still use it to make potato pancakes afterwards. *grin*

I'm interested. Let me know what I can bring. I made my Latkes last night, nothing special, although I bought sweet potatoes in case I decided go for something different. I use flour for mine, but I was thinking of trying rice flour as a GF alternative.

Sunday night is definitely out, Saturday night is probably busy, but might not be. I could do breakfast/brunch/lunch either day this weekend.
