I just hauled three bags of frozen raspberries out of the freezer.

Does cinnamon go with raspberry? My gut is no, but I'd welcome other opinions. I'm inclined to go with a little lemon juice and ginger.

If anyone wants to come over for football, pizza, and my first crack at making a pie, give a ring, but mind the weather.

cinnamon and raspberry? it might be fine, but it doesn't seem right to me. I think more of cooler spices with them, like mint. then again, i don't really like raspberries that much unless they are picked right there.

it's probably too late to be writing this now, but straight-up raspberry filling, without anything to cut it, is pretty intense.

as for what to season a raspberry-based filling with, i'd say a tiny bit of vanilla or nothing. ginger would probably be good too. a little spice (cinnamon, cardamom, or vanilla) in the crust probably wouldn't hurt, though.

Thanks. I put in a few squirts of lemon juice and a little bit of ginger and it came out about the right intensity. It just didn't set, which I suspect is primarily a function of the previously-frozen berries not having any structural integrity and me not taking enough steps to give them any (I took a lot of the juice and cooked it with starch, but the berries themselves probably needed more help in producing pectin).

i don't have a lot of experience with tapioca starch in pies, but from my couple of experiments it doesn't get things to gel quite as thoroughly as some other options do (this can be good or bad, depending) - for reference, even the most pulverized of frozen berries will set into something fairly solid with a good few tablespoons of cornstarch.
