And maybe better than my approach for dinners, which is to just find things from Trader Joe's that aren't obviously un-Kosher for Passover (and assuming that kitniyot are OK, which makes doing that a lot easier...). Now for lunches, I'm still not sure if I'm going to try to get Subway to make a sandwich for me on matzah--I did that a couple times last year (partly so I could say I had ham and cheese on matzah again ;-) ), but some of the people there were...a bit confused by the idea...
Yeah, definitely--I almost never actually cook from scratch; I guess I'm spoiled by Trader Joe's...which usually works, but can be less good at Passover... I did try making a farfel kugel from scratch last year for Passover, but it didn't come out all that great, and I didn't end up eating much of it. But, yeah...
That's like how my standard Pesach food is eggplant parmesan. Just substitute matzah meal for the bread crumbs, and it works. The only thing is, at any other time during the year if I were to bother to make it, I'd probably use sauce from a jar, but I have to make it from scratch for Pesach.
Trader Joe's actually happens to have a completely unbreaded eggplant parmesan that's pretty good, especially after you add some extra sauce to it (even though it's not something that I normally buy there at other times of the year). But I guess that also depends on whether you're OK with keeping "ingredient Kosher for Passover"...
On the other hand, if the proportion of meals that you buy from Trader Joe's isn't so high that you don't know what to do for dinner if it doesn't involve things from Trader Joe's (as is the case for me), I guess making it from scratch works just as well...
I'm a grad student. My one luxury (other than Netflix) is eating out a couple times a week (when it isn't Pesach). If, the rest of the time, I were to eat pre-prepared meals from Trader Joe's, I'd go way over on my food budget.
(I'm fine with "ingredient Kosher for Passover" although I don't eat any kitniyot, so there are only a few brands of jarred tomato sauce that actually work.)
